Catalan Style Spinach

Ingredients

One serving portion
  1. 80g baby spinach
  2. 30g Manchego cheese Truffle “La Antigua”
  3. 5g Pine nuts, baked
  4. 15g Arbequina Reserva extra virgin olive oil
  5. 05g Balsamic Vinegar
  6. 2g Sea Salt Flakes
  7. 5g Dry Black Raisin

Method:

  1. Remove the stamp from the baby spinach
  2. Wash the baby spinach with running water, dry with towel
  3. Shave the Manchego cheese with a vegetable peeler or the slicer
  4. Create a dressing with the balsamic vinegar and arbequina olive oil
  5. Begin with a bottom layer of baby spinach
  6. Add Manchego slices
  7. Add another layer of spinach and cheese before adding a final layer of spinach
  8. Top with nicest slices of Manchego cheese and black raisins, pine nuts, and dressing
  9. Finish the plate by adding salt flakes and olive oil around the plate
