  1. 600 g milk
  2. 160 g egg yolk
  3. 160 g sugar
  4. 60 g corn starch
  5. 36 g all-purpose flour
  6. 66 g butter
  7. 3 pcs gelatin leaves
  8. 250 g whipped cream
  9. 1 g vanilla
  10. 12 g orange blossom


  1. Boil the milk
  2. Sift the flour and cornstarch together
  3. Whisk the egg yolk with the sugar until a white colour is achieved
  4. Add the sifted flour and cornstarch, whisk
  5. Pour the boiling milk on the top of the egg yolk
  6. Whisk
  7. Bring back to boil and keep whisking for 1 minutes during the ebullition.
  8. Remove from the stove, add the gelatin leaves ( soaked in iced water), vanilla flavour and the cold butter
  9. Cool down on a tray between 2 plastic wrap
  10. When the pastry cream is cold, whisk in the stand mixer until smooth consistency.
  11. Incorporate the whipped cream and orange blossom with the rubber spatula
